Mackerel & Broccoli Fishcakes

This delicious recipe was created by @foodfitnessandfluff 😋😋😋

For two servings you need the following

  • 1 tin of Fish4Ever Mackerel in Sunflower oil
  • 2 peeled and boiled mashed potatoes
  • half a head of steamed broccoli
  • 3 finely chopped spring onions
  • 1 egg
  • 2 tbsp of plain flour
  • 1 dessert spoon of wholegrain mustard
  • squeeze of lemon
  • 1 tbsp of garlic granules, parsley, salt & pepper

 

Flake the Mackerel before adding to the mix of potatoes and broccoli, which should also be mashed. Also add the spring onions, egg, flour, mustard, lemon and seasoning! Shape & bake them in the oven for 20 minutes – turning half way through.

For the tartare sauce she mixed the following

  • chopped capers
  • gherkings
  • 1/2 yoghurt
  • 1/2 mayonnaise
  • salt & pepper
  • lemon juice
