Tuna & Mediterranean Veggie Pesto Pasta

For two servings you need the following
- Organico Pasta (75g per Person)
- 1 diced pepper
- 1 red onion
- 1 courgette
- half an aubergine
- 1 tbsp tomato puree
- Organico Vegan Pesto (60g)
- garlic, italian seasoning, salt & pepper
- 2 tbsp quark
- tin of Fish4Ever Tuna
Whilst my pasta boiled I diced pepper , red onion , courgette & half an aubergine which I cooked in a 1 tbsp of tomato purée & added garlic, Italian seasoning, smokey paprika & salt & pepper until soft .
I combined this with the cooked pasta , a bit of the Organico vegan pesto ( the best I’ve tasted ) & 2 tablespoons of quark & tuna & warmed the sauce through back on the hob🐟🐟🐟
I served it with a sprinkle of Parmesan! Enjoy 👌🏻👌🏻👌🏻
